Peppernuts are an Uhrenholdt family tradition at the holidays. This recipe came from Denmark. In Denmark the cookies are placed in woven paper baskets which are hung from the holiday tree.


1/2 cup butter – soft 2 teaspoons cinnamon

1-1/4 cup brown sugar 1 teaspoon ground ginger

1 beaten egg 1/4 teaspoon ground pepper

4 cups flour 1 teaspoon ground cloves

1 teaspoon salt 1 teaspoon allspice

1/2 teaspoon baking soda 1/2 cup heavy cream


  • In a large bowl, cream together the butter and brown sugar until light and fluffy.
  • Add egg.
  • Add the salt, baking soda, cinnamon, ginger, pepper, and cloves and mix until well combined.
  • Gradually add the flour, mixing until just combined.
  • Roll into sausage like rolls. cover with waxed paper and freeze.
  • Remove from freezer and cut rolls in half. then cut each half into quarters.
  • Roll the quarters on a cutting board until round, about 1/4 – 1/2 inch diameter.
  • Cut into 1/4 inch thick pieces. Place on a cookie sheet.
  • Bake for 10 – 15 minutes at 340 degrees.
